Kevin Weinberg has a knack for jimmying big flavor into things.

Take the Iceberg Wedge ($7.50), a menu fixture at Walnut Creek Yacht Club, which opened in 1997 and unveiled a major expansion six months ago. Most wedge salads rise only a bump or two above salad-bar basic — a hunk of bland cellulose, little more than an excuse to eat copious gobs of blue cheese dressing. Weinberg takes that steakhouse cliche and infuses it with a complex wallop of flavor. Resting in a puddle of buttermilk dressing heavily spiked with Tabasco, the lettuce was flocked in a confetti-like mix of crisp-fried onion sticks, toasted pecans, bacon and roasted red pepper strips.

The dressing tasted more tart than spicy, the fried and toasted bits were dark and somewhat tannic, the pepper lush and slightly smoky. And the iceberg? The hunk that showed up at my table seemed engineered to get out of the way of the vivid elements all around it. Sliced from the side of the head, it avoided the pale, watery core — the part that dilutes flavor.

Weinberg, partner Ellen McCarty and longtime head chef Cyrus Irudistan have always favored large gestures, even as they’ve worked in a genre bound by traditions that would seem to leave little room for them. The American seafood restaurant is a conservative creature. You got your steamers, your chowder, shrimp cocktail, maybe a lobster roll. Mess with the formula too much, and you invite exasperation from customers who like their seafood dinners with plenty of drawn butter and oyster crackers, the heck with truffle oil and microgreens. Walnut Creek Yacht Club’s appeal — more evident than ever, now that the space is bigger — is to wrap fish-house traditions in a vivid persona that rarely seems to overwhelm the basic concept.

The persona starts with the name, which is either a wry joke here in the landlocked WC or a shameless play for the glamour of yacht-club social status. But if the owners sought an air of Thurston and Lovey Howell chic (the seafaring millionaires from “Gilligan’s Island”), they missed by a nautical mile. With its regatta flags, scribbly LeRoy Neiman art and America’s Cup memorabilia, the Yacht Club skews masculine, jockish even. The addition (a space ceded by New York Pizza, which relocated nearby) continues the theme with a bit more panache. The ceiling is coffered and paneled, and a new oyster station offers barstool seating. It’s all as tailored and comfy as a really nice family room.

And, OK, the menu is written in the corny ahoy-matey language of the classic seafood house. Fish appear in a column labeled “Dockside”; sides fall under a category called “Extra Rigging.” A common shtick, but it’s rare for a chowder shack to offer seafood as pristine as the stuff on Weinberg’s menu.

The chef credits a family tie. His brother-in-law owns Osprey Seafood (a supplier that rivals Monterey Fish for having a stellar reputation among chefs), and Weinberg isn’t above working the connection to land something special.

That’s the case with the tiny bay shrimp in the Yacht Club’s seafood cocktail ($9.50). They come from a packing company in Fort Bragg, on the north coast. Though the fishery peels, boils and freezes its critters for the general market, thanks to that Osprey hookup, the packer holds some fresh ones back, just for Weinberg.

Mixed with cocktail sauce and a pinch of shredded iceberg, packed into a parfait glass and topped with a blob of grated fresh horseradish, they’re soft and a tad spongy, but delicious. Weinberg says his housemade cocktail sauce merely follows the classic recipe, but it was way more vibrant than any I’ve tasted. It had spunky heat and a finely hashed texture that set it apart from the ketchup-like smoothness of the classic.

On any given day, you can order one of a dozen types of fish, and get it grilled, blackened or sauteed a couple of ways. A pillowy slab of Alaskan halibut ($24) was nicely flaky, chewy under the black grill marks. A thick hunk of catfish ($18) turned out to be surprisingly delicate. You get to pick two sauces; WCYC Tartar Sauce combined a double blast from vinegar and sugary pickle relish. Skin-on Regatta Fries, one of five starch options, were perfect both times I tried them: crisp on the outside, creamy inside, and garlicky, but lacking the hot blast that turns you into an appalling rideshare mate next morning. You might never guess they’re freezer fries — ones of good quality, evidently, and cooked right.

A less simple dish revealed the kitchen at its most energetic. There was so much happening on a plate of Pacific Coast Swordfish ($26.50), the fish — flocked in Chinese five-spice powder, framed with squiggles of soy reduction and perched on a thick bed of pea shoot slaw and garlicky noodle salad — was almost lost at sea, though, individually, all the elements were tasty. Weinberg’s impulse for expansiveness sometimes yields heavy results. Littleneck Clam Chowder ($6.50 for a cup) tasted fine, but the overly thickened, overly creamy texture made you think of warm mayonnaise. And Meyer lemon cheesecake ($6) — a sort of dense pastry cream topped with buttery curd — was too rich to finish.

But even an unsatisfying dish can’t mar the appeal of a restaurant that almost always gets the basics right. More than a decade in, Kevin Weinberg has a space roomy enough to contain his oversized talent.
